Ingredients: 
1 lb Flank Steak or Chicken Breast
1 t Dried ginger
5 Green Onions (Chopped)
4 t Cornstarch
1 t Brown or White sugar
2 t Soy Sauce (Use low sodium soy sauce)
8 oz Lo Mein stir fry noodles
2 T Peanut oil
16 oz Frozen stir fry vegetables
1⁄2 t Salt
Cooking time: 
1 hour
Instructions: 

1) Thinly slice meat across the grain. Trim into strips, each about 1 to 2 inches long. Meat is easier to slice if it is partially frozen.
2) In a small bowl or quart-size ziplock freezer bag combine ginger, “green onions, cornstarch, sugar, and soy sauce. Add meat strips and cover with the marinade. Set aside for at least 30 minutes.
3) While meat marinates, cook and drain noodles in a medium-size pot following package directions. Mix in a few drops of oil to keep the noodles from sticking and set aside.
4) Place 1 tablespoon oil in a wok or heavy skillet and heat at medium-high. When oil just begins to smoke, add meat mixture and stir fry for about 3 minutes or until meat is cooked through. Set the cooked meat aside.
5) Pour 1 tablespoon of oil in the wok or skillet and stir fry the vegetables until slightly tender.
6) Combine vegetables, meat, noodles, and salt in the wok or skillet and cook until heated through.
