Description:

Mexican food now to your campsite! This can be served as a meal or a appetizer. ***THIS RECIPE IS SHOWN FOR A MEAL*** For an appetizer, this serves 4 people.

Preparation time:
20 minutes
Ingredients:
1 T Oil (Make sure it is not strong)
1⁄2 lb Tortilla Chips (I recommend the Late July restaurant style tortilla chips. They are really good!)
1 cn Tomato Sauce (I recommend the Muir Glen tomato sauce)
1 c Shredded Mexican Cheese Blend (Or grate some cheeses and mix them before camping)
1 cn Black Beans
1 Avocado ((CUBED))
4 Large Onions (You can use 5 if you want more onions)
1 Handful of fresh Cilantro (From produce not prepackged if possible)
1 Small Lime ((CUT INTO WEDGES))
Cooking time:
10 minutes
Instructions:

1) Lightly oil the bottom of a large pot, to prevent the nachos from sticking.
2) For the first layer, evenly spread 1/3 of the chips into the pot, topped with 1/4 can of tomato sauce, 1/4 can black beans, 1/4 cup cheese, and a handful of avocado, green onions, and cilantro.
3) Repeat this for the second layer.
4) For the third and final layer, use the remaining 1/3 portion of chips, 1/2 can of tomato sauce, 1/2 can black beans, 1/2 cup cheese, and the remaining avocado, onion, and cilantro.
5) Cover the pot and place on the burner on medium-high for about 10 minutes, until the cheese has melted. If needed lower it if everything else is not cooking through. Serve with the lime wedges.
